Within the family estate of Boursault, the Le Gallais family exploits four hectares of vineyards, located within a built heritage dating from the 16th century, and which also houses the castle, pearl of the Marne valley. Today, the Le Gallais and Fringhian families are at the head of the closed domain of the Château de Boursault. This property had belonged to Mme Veuve Clicquot, who had the castle built there in 1843. Her great-granddaughter, the Duchess of Uzès, separated from the estate in 1913. Then, in 1927, the great-granddaughter of Hervé Le Gallais bought him with her vineyard. Almost a century and five generations later, many things have changed in the work of the vineyard and the winery, but for Hervé what does not change is “the importance of taking care of the raw material, the grape”. Everything is essential when you are an independent grape picker-handler and winemaker, but Hervé is very attentive to two stages: “The grape harvest and the press in which we are very involved, the key to good wine is there.” In difficult years like 2016 and 2017 with a complicated climate, everyone will understand the interest and luck of having the vines at the foot of the press, ideal for optimal reactivity and guaranteeing the freshness of the fruit.
