Gregory Marchand, originally from Nantes, went to a hospitality school in the Loire region. Driven by a desire for discovery, he set out for his first experiences abroad with his knife case as his only companion. After London, New York, Spain and Hong Kong, he returned with his wife Marie to Paris, where in 2009 he created a place that reflects his personality, his travels and his culinary identity.
